About Ragi Pudding
Ragi Pudding is made using ragi flour, cocoa powder, cane sugar and milk. It comes together to make a pudding that tastes really great. The ragi flour gives it a healthy touch and slight nutty flavour. The cocoa powder brings rich chocolate flavour and chocolate chips add sweetness.
Milk and water mixture helps ragi cook evenly without lumps. When you cook ragi flour properly it becomes smooth and creamy. The pudding thickens as it cooks and when it coats the ladle nicely thats the right stage to stop. After it cools down it becomes firm and slice neatly.
You just need to mix ingredients and cook them together on low flame. The texture come out smooth when you stir properly and avoid lumps. It tastes like chocolate pudding but with the goodness of ragi flour. The pudding stays good in fridge for 2 to 3 days so you can make ahead.
I usually make ragi pudding for dinner dessert or when I want something sweet that not too heavy. My family loves it because it tastes indulgent but it is healthy.

2.Whisk it well. Now add the milk water mixture.

3.Whisk it well. Now switch ON the stove and keep stirring using a whisk.Cook in lowest flame possible. It will start to thicken and starts to come together.It should take at least 8-10 minutes for ragi to cook fully in low flame. If not add more water.

4.Add chocolate chips at this stage. Keep stirring and cook until thick and shiny.

5.It will coat the ladle like this, this is the right stage switch off and immediately. Brush water in the bowls and pour the pudding in heat safe bowls. I poured in my ramekins. Cover it and refrigerate.

While serving garnish with sprinklers and serve chilled. Actually I am not fond of sprinkler so promptly remove it while eating.
