Soya Chunks Biryani is a flavorful one pot meal that can be made quickly and easily. This is one of the quickest biryani as there is not much of chopping just onion, tomato so gets done easily. This biryani is best to pack for lunchbox too.

Soya Chunks Biryani is a aromatic and flavorful biryani made with soya chunks popularly known as meal maker. I saw this biryani recipe in a TV show which I adapted to suit my family taste and now this has been my keeper for years.
You can make Soya Chunks Biryani with vegetables also. Now I know this biryani will sure be in our menu often, this can easily fit in your kids lunch box too. This is healthy, nutritious and sure a yum biryani combo.

- Rice – Basmati rice is best to use. However you can use seeraga samba rice too.
- Ginger garlic paste – Ginger garlic paste is added for flavor.
- Spice powders – Red chili powder and garam masala powders are added.
- Coconut milk – Coconut milk adds flavor.
- Masala paste – Tomato along with mint, coriander leaves, pepper and fennels seeds are grind to a paste and used.
- Tempering – Whole spices like cinnamon, cloves, cardamom, bayleaf and shahi jeera are tempered in oil, ghee.
How to make Soya Chunks Biryani Step by Step
1.Boil 1 cup water with a tablespoon of milk and little salt. Once it starts boiling rigorously switch it off and add the soya chunks, set aside for 10 minutes. Can you see it has grown almost double in size now.

2.Rinse with cold water thrice at least to get rid of the raw smell of soya chunks. Grind the ingredients under the list ‘to grind’ to a fine paste. Set aside.

3.Heat oil + ghee – add the ingredients under the list ‘to temper’ add ginger garlic paste, onions and fry till it turns slightly browned. Then add the mint coriander paste along with red chili powder and garam masala powder. Saute till raw smell leaves.

4.Then add the soya along with salt. Mix well until the gravy is well blended with the soya. Presoak rice in water for 15 minutes. Drain water and add the rice, give a quick stir.

5.Now add coconut milk, water and pressure cook for 3 whistles in low medium flame. Once pressure releases, open and carefully fluff the rice with a fork.

Serve hot with onion raita!

Expert Tips
- Adding shahi jeera gives a nice unique flavor. But if you don’t have it, just go ahead with normal jeera(cumin seeds).
- Soya chunks by itself is totally bland so the spices and masalas should be dominating to give it a nice blend.
- You can garnish with coriander leaves too at the finish.

Biryani with raita is an unbeatable combo! Onion Raita, Pineapple Raita , Cucumber Raita, Carrot Raita are some of the raita suggestions.
Biryani gets tasty with time, so you can refrigerate & reheat for later use within the next day of preparation.

Ingredients
To grind to a paste
- 1 medium sized tomato
- ¼ cup coriander leaves
- â…› cup mint leaves
- ½ teaspoon pepper
- 1 teaspoon fennel seeds
To temper
- 2 teaspoon oil
- ½ tablespoon ghee
- 1 bay leaf
- 2 cloves
- 2 cardamom
- ¼ inch piece cinnamon
- ½ teaspoon shahi jeera
Instructions
