You can enjoy seasonal mangoes in a different form and this recipe is also easy to make and does not need much effort. It can be made ahead and kept in freezer until serving time.
These popsicles has creamy texture from coconut milk and juicy mango pieces in between. Once frozen, the flavours blend together well and gives refreshing taste. The yellow mango pieces makes the popsicles look colourful and appealing. It tastes best when served straight from freezer.
This recipe can be changed based on the mango variety you have at home and sweet mangoes work best. Honey can be adjusted as per taste and some people add little cardamom powder for flavour. It can be served as an evening snack or after meals. It is also a nice treat to make during hot summer days.
I make these popsicles during mango season, my kids love popsicles so I make different varieties and this is one of my favourite among and it takes only few minutes to prepare.

- Mangoes – I used mango for sweetness, fruity flavour and it gives the popsicles that bright yellow colour, ripe sweet mangoes works best for this recipe.
- Coconut Milk – Used coconut milk for the creaminess, sweetness and richness, you can replace with dairy milk for plain mango milk popsicles.
- Honey – Used honey for sweetness to balance the taste in the popsicle and you can adjust as per your taste.

How to make Mango Coconut Popsicles Step by Step
1.Rinse the mango first then cut into cubes and collect it.

2.Collect the cut mangoes in a bowl. Take your popsicle mould. Add chopped mangoes to it.

3.Take coconut milk, add honey to it mix well and keep it ready.

4.Fill mango mixture till half if the popsicle mould. Now pour coconut milk mixture to the mould till the rim of the mould.

5.Using a long stick mix it.

6.Close with lid and freeze for at least 8 hours or overnight. Then while serving time, show the mould under running tap water or dip it in a bowl containing water. Carefully pull out the popsicles.

Serve immediately.
